No Bake Blueberry Almond Energy Bites

Blueberries are brain foods.They’re an excellent source of antioxidants called flavonoids. 

Energy bites are an easy breakfast recipe, a post-workout snack, or a nutrient-filled dessert.

Ingredients:

¼ cup flax meal

½ cup dried blueberries

2 tbsp coconut

⅓ cup raw almonds, finely chopped

1 cup gluten free oats

1⁄4 cup agave nectar

6 tbsp almond butter

2 tsp almond extract

Directions:

  1. Combine oats flax meal, dried blueberries, coconut, almonds together in a bowl. Toss to combine.
  2. In a microwave safe bowl, combine the wet ingredients--agave nectar, almond butter and almond extract.
  3. Microwave for 30 seconds, stirring to ensure the mixture is smooth.
  4. Combine your wet and dry mixture. Stir until combined.
    Tip: If you find that you need more almond butter, just be sure to melt it until it’s smooth and add until the mixture clumps
  5. Take a tablespoon of the mixture and roll into a ball. Store in the refrigerator for 2 hours. Leftovers can be stored in an airtight container in the fridge for up to 1 week!
